Tobiccho is concerned about the freshness and tastiness of Shirasu (whitebait, baby sardine). The shirasu don't stay fresh so long that Tobiccho uses only ones caught on the day. The shirasu come directly from Shonan, Fujisawa, Katase and Kamakura fishery port.
